Hello Grazers (and Nut Butter Nutters)!

We’re back with another fun, easy recipe featuring our very own All Natural Almond Butter! If you love cookies but always wished they were healthier (and easier to make), then have we got a recipe for you!

 

When we first made this recipe (adapted from here), it was hard to believe that there were only 6 ingredients involved…and that flour was not one of them!

 

Can a flourless cookie be as good as the original? With this recipe, they absolutely can! The almond butter, honey, and egg combine to form a (very) sticky dough – but once baked, they puff up beautifully into pillowy, chewy cookies that taste amazing. With the crunch of the almond on top and the melted dark chocolate chips embedded throughout, the ultimate result is a decadent, satisfying, (and healthy!) cookie.

Flourless Almond Butter Bites

Makes: 20-30 bites

Ingredients:

1 cup Amazin’ All Natural Almond Butter (oil stirred in well)

1/3 cup honey, slightly warmed (about 20-30 seconds in the microwave)

1 egg

1 tsp vanilla

1/2 tsp baking soda

1/2 cup dark chocolate chips

20-30 Almonds (optional)

Pre-heat oven to 175 degrees C.

Line baking sheet with parchment paper.

In a bowl, beat almond butter, honey and egg until combined, scraping down bowl.

Add in baking soda and continue to mix for 2-3 minutes on medium-low speed. The dough will begin to thicken and it will be sticky.

Using a spatula, mix in the dark chocolate chips.

Use two teaspoons to scoop and drop the dough (in a rough ball shape) onto the baking sheet about two inches apart. You only need a small amount of dough as they will puff/spread. Top with an almond, if desired.

Bake for 10 to 12 minutes until browned, they will puff up. Cool on baking sheet.
